During the last 4 years since its inauguration in Guatemala city, Gracia Cocina de Autor has become one of the main exponents of gastronomy in the region, winning several times the Certificate of Excellence, from Trip Advisor, among others.Through its dishes, their renowned Chef – Pablo Novales – succeeds in mixing the influences from the Basque region and other different international cuisines together with Guatemalan ingredients to create a unique fusion of flavors, colors and aromas.For Chef Pablo Novales, the passion for gastronomy was born during his adolescence, leading him to make the decision to study culinary arts, and it was reaffirmed when, after studying for several years in Guatemala, he began his journey through the great kitchens of the old continent. Upon returning to Guatemala, the Chef decided to embark into the Central American cuisine, creating Gracia Cocina de Autor restaurant, a unique concept in the region for its great diversity of flavors and the original presentation of its dishes.
With the intention of offering our customers a better service, sharing in their passion for wines, Gracia Cocina de Autor is the only restaurant in Guatemala with a professional sommelier on their team. Our sommelier, Julien Crouzet, originally from the region of Burgundy France, previously worked at the famous hotel Chiltern Firehouse in London.
